Details of vinification and oaking:
This is from one of the oldest blocks on the farm. For many years it has been under contract to another winery, so this is actually the first year we have bottled wine from it. We think it was worth the wait! Because it is older and fairly low-yielding, it makes a quite rich wine. We decided to handle it in a classic, traditional “Graves” style. That is, it was carefully barrel-fermented in mainly older, neutral oak. Part of the grapes were whole bunch pressed to preserve acidity. The wine was given regular lees-stirring, then allowed to settle naturally. We gave the wine a minimum protein fining and let the wine clarify naturally. It was bottled with minimum filtration and no other stabilization.
Intriguing complex aromas of grapefruit and lime with chamomile and some wild fynbos notes. Intense and persistent on the palate with a great depth of fruit and an excellent, grippy acidity.
