We hand-craft our wines in small volumes using traditional methods: hand sorting, open-top fermentations, hand punchdowns and manual basket pressing. All the Stark-Condé wines are bottled without fining and filtration. We make about 6000 cases. Winemaking by José Conde.
Our Cabernet Sauvignon and Syrah (red capsule) are made from carefully selected vineyard blocks on our property in Jonkershoek Valley.
The Stark-Condé Three Pines range consists of a Cabernet Sauvignon and a Syrah from high-elevation vineyard blocks. The name Three Pines is a reference to the lookout spot at the top of the farm, from which the highest vineyards are visible.
The Pepin Condé wines allow us to explore vineyards outside of our valley. The Sauvignon Blanc and Pinot Noir comes from grapes grown in the cooler Elgin climate, while the Chenin Blanc is made using natural bush vines from the Bottelary region in Stellenbosch.
For several years we have been working on farming our vineyards more naturally, following organic and biodynamic principles. We started with newly planted vines situated 600 meters above sea level (Stellenbosch's highest red wine vineyard) and we are in the process of extending the practices throughout our farm.
